Wash and slice the mushrooms and celery, then heat and soften in a dry pan. Add stock as required and cook to your desired consistency. Slice the shallots then heat and soften in a second dry pan. Add the rice and cook over a low heat for 1 min, until the rice becomes transparent. Add the white wine and let evaporate. Add the fat-free cream to the rice and stir. Check the seasoning. Add the stock and stir with a wooden spatula until the cooking liquid has evaporated. Add the pre-cooked vegetables. Lightly salt the prawns, and cook in a pan. Present the risotto in a dish topped with the prawns. Add the chopped parsley and chervil.
Add parmesan to the risotto, but consider it as the portion of cheese of the meal.
